Hearty Corned Beef Muffins

Ingredients

1 x 340g can Hereford Corned Beef, diced
4 eggs
1 ½ Cup of milk
½ Cup of butter, melted
2 x 325g boxes cornbread mix
1 jalapeño, seeded and minced
1 Cup grated cheddar cheese

Directions

1. Heat oven to 375º F/190º C.

2. Mix together the eggs, milk, and butter.

3. Stir in cornbread mix and combine well.

4. Fold in the diced corned beef and jalapeno.

5. Divide mixture into paper lined or lightly oiled muffin tins. Makes 24 muffins.

6. Bake for 18 minutes or until muffins are cooked through.
